Food | Recipe: Healthy Comfortfood

Soup, the most underrated sort of comfortfood.

Fall began, there’s no way to deny it. It’s cold, it’s rainy, it’s grey and the wind s*cks big time. The fact that I have to walk home for 20 minutes after school almost makes me sad as the end of the last lesson approaches.

When I finally get home, I really need some warm comfortfood to charge my batteries again. Sure, some hot appelpie with wipped cream would do the trick, but on days like these, vitamines are more than welcome. So, once in a while, I make several liters of soup with fresh veggies. Of course I don’t drink it all at once. Most of it gets stored away in little boxes in the fridge, so each time I get home all numb and tired, I take out a box, put it in the microwave and then drink some very yummy hot soup on the coach.

Here’s on of my favourite recipes:

What You need

4 zucchini’s – 1 red paprika – 1 big onion or 2 small ones – 2 cloves of garlic – butter - chicken bouillon cube

What you do

heat the butter in a large pot - once the butter is hot, add all the chopped vegetables, the onions and the garlic – let everything simmer for a few minutes – add water until everything is covered – once the water is hot, add the bouillon cube – let the water cook a few minutes until all vegetables are medium soft – mix – drink!
